Where do you source your matcha?

Our matcha is sourced from a small, multi-generational farm in Shizuoka, Japan. The farm is nestled south of the iconic Mount Fuji, Shizuoka Prefecture that boasts nutrient-dense volcanic soil that promotes the growth of healthy green tea leaves, while its rivers provide a clean water source enriched with minerals, supporting the numerous tea farms throughout the area. Shizuoka, alongside Uji and Kagoshima, is recognized as one of Japan's leading green tea-producing areas, accounting for approximately 40% of the nation’s annual commercial output.

We ensure that every batch of powder reflects the time, care, and quality that goes into every harvest. With centuries of expertise behind us, Moonbug is produced using traditional, time-honored methods, from the shading of the tea leaves before harvest to the fine stone-grinding process.

Chagusaba nōhō is an agricultural practice in Shizuoka in which dried silver or bamboo grass, is spread in the plantations to enrich the soil, enhancing the flavor and aroma of the tea leaves.

How do I make matcha?

  1. Measure out 1-4 grams (about 0.5-2 teaspoons) of matcha powder. If you're using a Chashaku (a traditional bamboo spoon), a full scoop is approximately half a teaspoon. The amount of matcha you use depends on how strong you want your drink.
  2. Add 30-40 mL of hot water (60-70°C), which is hot but not boiling. Be careful not to use boiling water, as it can burn the powder and bring out bitter, grassy flavors.
  3. Whisk the mixture quickly in a zigzag motion until a layer of small bubbles or froth forms.
  4. Now, add your preferred sweetener. We recommend using a liquid sweetener like honey, flavored syrups, or maple syrup for easy mixing.
  5. If you're making an iced matcha latte, pour the whisked matcha over a glass of ice and milk. We love oat milk as it pairs nicely with matcha’s umami notes.
  6. If you prefer your matcha without milk, simply add more water or pour it over ice for a refreshing drink.

Feel free to experiment with the ratios until you find your perfect balance.

Does matcha have caffeine?

Matcha contains about half the caffeine of a typical cup of coffee, but thanks to the natural L-theanine, it provides a slow and steady energy release, helping you stay focused without the jitters or crashes.

Should I get culinary or ceremonial?

The choice depends on how you plan to use it and your taste preferences. There’s technically no official grading system for matcha, but it is considered "Ceremonial" when its leaves are shaded for several weeks and from the first harvest of the year (which usually takes place in spring.)

Our Ceremonial matcha is made from the youngest, most tender leaves, hand-picked during the first harvest. The leaves are de-veined and de-stemmed, leaving only the softest part of the leaf, which is then stone-ground into an ultra-fine powder. It has a smoother, more complex flavor profile with a natural sweetness and a vibrant green color. It's ideal for lattes or enjoying on its own with just water.

Culinary matcha comes from later harvests, with slightly older leaves. It has a bolder, slightly more bitter taste, making it perfect for lattes, smoothies, baking, or adding to recipes. Although considered lower quality, it still packs a great matcha flavor and is typically more affordable because it doesn't require the same level of care during harvest as ceremonial grade.

Matcha powder is sensitive and slowly deteriorates after it's exposed to air, sunlight, heat, and moisture. It's normal for its color to become more dull within a few weeks of opening.

Why does matcha powder separate from the liquid after awhile?

This happens because matcha is finely ground tea leaves, which don't fully dissolve in water. To fix this, simply stir with a spoon.

To avoid any big clumps floating around, sift your matcha beforehand and whisk well with your bamboo whisk.
